I've been reading for a couple of weeks now on plate carriers and armor. I've decided to go with the CRYE JPC 2.0 in size XL, I'm a big guy. I'll be purchasing a SAPI cut plate in size 11"x14". I've looked at so many different rifle plates my head was spinning, but I've narrowed it down to a couple different options. It's very confusing trying to determine the various threat levels and the information in this forum has been incredible. The post from Doug Deaton was especially helpful.
This is for work in the CONUS. For security, I'll keep my location private, but this is in a very large metropolitan area.
I am looking specifically at the HESCO 3810 and the U210 right now, but would consider other options if it makes sense. There is a lot to like about the U210, but the 3810 looks like it can stop the 7.62x54R which I assume, maybe incorrectly, that it can also stop .308?
The U210 also has the M855/A1 listed as a round it can defeat, but it's not listed for the 3810. This is where things get confusing for me, does it mean that because it is not listed, it cannot defeat that round (referring to the attachment below)?

I know my purchase is dependant on the types of threats I could face, but I do not know exactly what those could be and could use the help of people on this forum to make my decision. This is a real exercise and I'll be spending a lot of money to make the purchase and your advise would be greatly appreciated.
